Ageing : Manual harvest, pressing of the whole bunch of grapes, alcoholic fermentation at 18°C, malolactic fermentation in temperature – controlled stainless steel tanks, liquor with only chardonnay, bunches from old vines (on average 35 years),
ageing on boards in our traditional cellars.
Blending : With several years in order to get a product of constant quality.
Dosage : 12 g of sugar per litre

Visual examination : Gold yellow colour, severeal delicate bubbles
Olfactory : Riche nose with candied fruit aroma
Gustatory : Light Champagne with freshness ; good balance

Wine and Food Pairing :
Suits perfectly for aperitif but very nice too with a dish.
